Delicious Chicken & Dumplings (from scratch)...
Yield: 8 servings
Cook Time: 30 mins + 20 mins
The Broth....
I prepare the following ingredients, as if I were making a chicken soup... cooking it down until I have a delicious broth....
- Water
- A rotisserie chicken
- 2 Tbs, Chicken Base (or 6-7 bullion cubes)
- Chopped carrots, celery (or celery flakes), onion (or dried minced onion)
- Season with: salt, pepper, garlic powder, a pinch of turmeric, and Italian seasonings
(or whatever else I feel like at the time!)
- Put everything into a large-ish pot
- Bring to boil
- Reduce heat to to a simmer, and cook for as long as possible (at least 2 hours).
- remove chicken
- strain & reserve broth
- debone chicken, and tear into small pieces
After it is finished cooking:
The Dumplings...
The following is for a single batch of dumplings, though we prefer extra, so I make 1½ batches of dumplings (per one batch broth) for our soup.
- 2 cups of Kamut® flour
+ a little extra for rolling & later, thickening (though cornstarch works well, too) - 1 tsp of salt
- ½ cup (1 stick) of butter, cold
- 2/3 cup of Milk
- large bowl
- pastry blender (or two forks, work just as well)
- pizza cutter
- Combine dry ingredients (flour & salt)
- Cut butter into ½ T. sized pieces
- Add butter to dry ingredients
- Cut into flour with a pastry blender, until butter is the size of large peas
- Add milk
- Mix just until dough pulls together
- Cover the bowl with a towel, and chill for 25 mins
- When finished chilling, roll onto a well-floured surface
- Roll until it's about a 1/8" thickness
- Using a floured pizza cutter, cut the dough into 1½" x 1" rectangles
Putting it all Together...
- 9 cups of Broth (add water if you don't have enough)
- 3-5 Tbs of flour (or cornstarch) - depending on desired thickness
- 1/3 cup of Cold water
- 1/2 tsp of dried parsley
- chicken
- whisk
- Skim fat from reserved broth
- Heat to boiling
- With a whisk, dissolve flour in cold water
- Add to broth while whisking
- Add parsley
- Add chicken & dumpling dough
- Bring to a boil
- Reduce heat & simmer for 20 mins
- Let sit about 20 mins before serving
