Black Bean Brownies.

These are sweet, chocotaley treat -- with a fudge-like consistency... yet don't taste at ALL like beans... and are gluten/grain-free & fairly healthy!

Ingredients

  • 1 (15oz) can organic black beans - rinsed & drained
  • 3 eggs
  • 3 Tbs oil (I use coconut)
  • ¼ cup of cocoa powder
  • 1 tsp vanilla
  • a pinch of salt
  • ¾ cup of sugar (or I've used approx ¼ cup of granulated Stevia for my non-sugar eating kiddo)
  • 1 tsp of instant coffee granules (optional)
  • ½ cup chocolate chips


Directions
  • Preheat oven to 350°

  • Put beans. eggs, & oil into blender.... blend until smooth
  • Add the rest of the ingredients (excpet for chocolate chips)
  • Blend until well combined
  • Pour into a greased 8x8 pan
  • Fold in the chocolate chips or just sprinkle across the top
  • Bake  for 20-30 mins. 
  • Let cool before cutting...  Enjoy!
